When it comes to pizza, sometimes the best chef is the one making the decisions and at Pieology St George, that person is you.
Self-made pie
For any Seinfeld fans out there, the idea of a pizza place where you make your own pie is not entirely new. Good old Cosmo Kramer discussed this very thing in an episode of the popular sitcom about nothing. Although in Kramer’s scenario, people would do everything from kneading the dough to sliding it into the oven. That’s not exactly how things go at Pieology St George. But you get to make all the decisions.

Stepping into Pieology St George during lunch recently, it is clear the restaurant is popular, but not overcrowded. Plenty of tables in a variety of seating arrangements makes it easy to accommodate Pieology St George groups of all sizes.
Pieology St George is an order-at-the-counter kind of a place. But instead of a menu filled with pre-determined pizza styles and flavors, you get to mix and match any way you choose. Naturally, you start with the crust. You can choose from thin, whole wheat, thick, deep dish or cauliflower (gluten free). Then, you pick your sauce. Traditional marinara, of course, as well as barbecue, alfredo, garlic herb, fiery buffalo and a sunflower-olive oil blend. When you combine that with the options of six different cheeses and 23 toppings (veggie and meat) the possibilities are endless. You can even add what Pieology St George web site calls, “after bake sauces” drizzled on top: Pesto, barbecue or buffalo.
And its all for the same cost. That’s right! No limit on toppings. Everything is included in the price of your pie.
The experience
After discovering there was a Dixie Direct coupon for buy-one-get-one-free pizza, everyone from our group ordered two pizzas —one for now, one to take home for later. That make considering the Pieology St George pizza options even more fun. I finally settled on a barbecue chicken and bacon pizza, and a second with alfredo sauce, chicken and bacon. I know — but can you ever really have too much bacon? Nope.
The pizzas arrived at our table fresh from their cozy stay in the open oven. The variety was as diverse as the personalities in our group. Thick crust, thin crust, loaded with veggies, meat only and more. This would be a great place to sample a wide range of pizza flavors and toppings because you’re not out any additional money to just pile it all on.
Biting into the first slice, it was clear this is a great place simply because of the flavor. The thin crust was crisp yet chewy, with a smoky, wood-fired flavor. And the toppings mingled together with the sauce and cheese in absolute perfection.
In the end
The bottom line for many people is the cost. And Pieology St George allows you to create your own pizza with unlimited toppings for just $7.99.
Plus, its fun.
